Excuse the chipped plate (a castoff from The Boy's family) and my picture-taking shadow! I snapped this really quickly before we dove into the delicious meal last night. This is my favorite salad without meat or fish on it.
Fried Goat Cheese Salad
Whisk one egg with a cup of bread crumbs
Pack chevre (goat cheese) into small patties, about 2 in wide and 1/2 inch thick
Coat patties in breading mixture
Fry in a pan with just a touch of oil until they brown gently
Flip and repeat
Place lettuce on plate and garnish with chopped tomatoes, red onion, raisins, and candied walnuts
Top with your fried goat cheese patties
The whole meal takes about 45 minutes to prepare if there's only one person in the kitchen. Get someone to help you prepare the lettuce, tomatoes, and onions and it should only take 25!
